Eggplant Pizza
When we think Pizza, we assume that it is made of wheat flour. Some months ago, I saw a pizza crust made from cauliflower, I tried making this once, but I was not able to compress the cauliflower adequately enough to make a crust. I then thought of trying the same thing with other vegetables. I chose eggplant, which really tastes delectable. Here I want to share it with you.

Ingredients
- 2 big Eggplants
- 4 Roma Tomatoes, washed and diced
- 1 teaspoon of cumin (ideally: Pereg)
- 1 teaspoon of sweet paprika (ideally: Pereg)
- 2 cups of Feta or any other cheese
- ½ cup fresh basil, chopped
- ½ cup of Olive oil
Tools
- 1 plastic bowl
- 1 colander
- 1 wooden spoon
- 1 small wooden teaspoon
- 1 or 2 big aluminum tray (s)
- 1 knife
- 1 roll of paper towel
- 1 Serving platter
Steps to prepare the dish
First step:
- Preheat the oven to 350° F.
- Wash the eggplants.
- Slice them uniformly in 1/2 inch thick, long strips.
- Put the slices in a colander and sprinkle salt generously over each side of the eggplant.
- Let sit for around 20’30 minutes
Second step
- Meanwhile, add the oil, paprika and the cumin in a bowl.
- Stir these ingredients and let it sit.
- After 30 minutes take the slices of the eggplant and rinse each one carefully, do not use so much water.
- Place them on a paper towel and pat them dry.
- Take each slice and soak it in the oil mix and then place each slice on the tray.
- Add 1/2 of teaspoon of over each eggplant’s slice.
- Add 1/4 teaspoon of Feta cheese and spread it all over the eggplant.
- Sprinkle some basil over the tomato and the cheese
- Put the tray(s) in the oven.
- Bake the eggplants for around 20-25 minutes or until until soft to touch with a fork.
- Let them cool at room temperature.
Third step
- Serve it on a platter.
