Fish

Before I came to the United States, I lived on Margarita Island for more than 20 years.  The name does not imply that we drink Margaritas!! Rather, when Columbus discovered this lovely isle in 1498, he he discovered many pearls there — therefore Margarita Island is known as Isle of Pearl.   For “margarita” happens to be the name for “pearl” in ancient Greek.  We were visited by Dutch and British pirates. Today, the Island is suffering devastation through the political and economic situation which the whole country, Venezuela, is experiencing. There was no place finer than Margarita Island for eating fresh fish. I am sure, other places with a shoreline, and fishing enterprises, can relate to what I am saying. In our Cook Book,  I presented some delicious and easy fish recipes, some of which I had already prepared when we had our traditional President, Provost, and Faculty dinners.
