This is where the Campus Kitchens journey starts– recovery! Volunteers canvass dining halls and other retail locations in the North Shore area, where they safely recover leftover food that would otherwise go to waste. 

Step 2: Resourcing! Once a team recovers food, they will return to our central kitchen and they will be met by a team of volunteers, led by a ServSafe® manager certified shift lead, prepared to safely handle and store recovered goods for later distribution.

Once food has been safely handled and stored, our next group of volunteers will use this food to craft nourishing meals for our recipients. From PB&J to quinoa salad, volunteers employ culinary creativity to serve our community.

Last but not least– Delivery! After meals have been made, volunteers will pack them up, alongside snacks and pans of food, to distribute throughout Chicagoland, fighting food insecurity one clamshell at a time.
